Mandel bread, a traditional Jewish cookie, is similar to Italian biscotti. Like biscotti, mandel bread is twice-baked and crunchy. However, because it is baked with more oil, it is a bit richer and less dry.
The recipe is very simple and no mixer is needed. The basic recipe is divided into two loaves, therefore, you can easily make one loaf with chocolate chips and the other with dried fruit.
